WHAT IS A CREPE ?

The crepe is not so common in the North. That's the reason why we have brought it here! Basically, imagine a pancake but make it a lot thinner, and you have a crepe! At Café balzam, we make crepes using sourdough (regular) or gluten-free batters.

Do you know?

The '49er Flapjack' is a sourdough crepe getting its name from the popularity of this style of pancake during the Klondike gold rush of 1898. It was said that a real "Alaskan Sourdough" would no sooner spend a year in the hills without his rifle, than to tough it out without his bubbling sourdough pot. Since food was scarce, food provisions were more valuable than gold. In extreme cold, miners would put the dough ball under their clothes, next to their skin, or tuck it into their bedroll with them at night, anything to keep the yeast in it alive. (Wikipedia)

IS THE FOOD REALLY HOMEMADE, OR IT IS JUST ANOTHER MARKETING TERM TO TOSS AROUND ?

We are proud to say that about 90% of our dishes and desserts are completely made-in-house. It takes more time than opening a box of frozen food, indeed, but it is worth it! Your taste buds will taste the difference!

IS CAFÉ BALZAM AN ORGANIC RESTAURANT?

Although some of our suppliers hold an organic certification, not all of our products are grown organically. However, as our restaurant strives to provide local, natural & sustainable food grown by Yukon's finest farmers & breeders, we always choose organic products when available, either from our producers or at the grocery store.

DO YOU SERVE ALCOHOLIC BEVERAGES ?

The restaurant holds a liquor licence for serving beer, cider and wine. We offer a great variety of beverages, including many Yukon Brewery local products. Hard liquors such as whiskey, rum or vodka are not available. If you plan to go for a soak after your dinner, please note that no alcohol is allowed under any circumstances in the Takhini Hot Pools.
